Stuffed Sardines
Well it's been 30 days and there are 30 recipes!
We've eaten well, sometimes healthy, sometimes not!
But above everything, if you are on a budget, cooking from scratch IS the cheapest way to eat. Even if like me you're cooking for more than 10 people.
To finish my challenge I'm doing a family classic that my Italian grandmother taught me, many moons ago!

I prefer to buy the sardine whole and fillet them myself.
It's not that daunting working with fish, prepare to get messy, work quickly and with convictions and use a sharp knife!

Hello...pretty fishies!
Sardines are so under-rated! I grew in the south of France and we ate sardines alot....grilled, barbequed and stuffed. Stuffed was my favourite.
It's such a simple recipe, just fiddly!
You will need:
2 sardines per person for a starter
150g spinach
150g flat left parsley
1 egg
1 cloves of garlic
50g breadcrumbs
Flour for dusting
Lemon juice to squeeze

Firstly, fillet your fish.

Now for the stuffing. In a bowl mix the spinach, parsley, garlic, breadcrumbs and egg, then season with salt & pepper. Place 1 large tablespoon of stuffing on each sardine fillet.

Dust the stuffed sardine, top and bottom. Heat vegetable oil, and fry on bothe sides, for approx 4 mins on each side. Add a squeeze of lemon juice while cooking.

Serve warm with a salad and another squeeze of lemon juice.
Also great cold for a beach picnic!
