Potato & Chorizo Salad
Recipe 25 of 30. Nearing the end of my 30 recipes in 30 days challenge. What will I do with my time afterwards!!!!
Summers are just one BBQ after another. Simple side dishes are called for.
This is a recipe for a light (calorifically) potato salad.

I use a low fat plain yoghurt to lighten the mayonnaise. 50/50.
So you will need:
500g new potatoes
150g mayonnaise
150g plain low fat yoghurt
1 teaspoon Dijon mustard
salt & pepper
handful finely chopped parsley
50g chorizo

Chop into small pieces and boil the potatoes, drain and cool. Fry the chorizo and add to the potatoes.

Mix everything together in a bowl and chill.

Voila!
