Baked courgettes stuffed with garlic butter, cheese & parsley. A great side dish or a vegetarian main dish served with a salad.
You could also use aubergines or potatoes for this dish.
You will need:
garlic butter (or olive oil & crushed garlic)
100g grated cheddar
handful of parsley, finely chopped
salt & pepper
Slice the courgettes width ways with 1 cm gaps. Chop the parsley and mix with grated cheddar and salt and pepper. Fill each gap with garlic butter and then top with the cheddar & herb mix.
Baked in a pre-heated oven at 185c for 1 hour.
These are delicious!!!
Serve with hasselback potatoes & salad. Voila!
