Chicken & Chorizo Ragu
Recipe 21 of 30...I've got a few days of catching up to do! 30 recipes in 30 days is quite a challenge and there have been some failures, not many but some! Hence the set back!
Tonight it's a pantry supper!
So what do I have in the pantry?
It's a one pot dinner.
4 Chicken thighs
1 tin chopped tomatoes
1 tin white haricot beans
1/4 chorizo sausage
5 new potatoes
2 garlic cloves sliced
1 chicken stock cube
1 teaspoon dried herbs de provence
In heavy bottomed pan, fry off the chorizo, garlic & herbs.
Add the chicken thigh and brown the meat.
Roughly chop the new potatoes.
Add the tinned tomatoes and 400ml of water, the stock cube, cloves & potatoes. Bring to the boil and cover for 30 mins. Then add the drained haricot beans, leave the lid off and cook for 15 mins.
I also prepared some peas in garlic & herb butter.
and that's a simple one pot pantry supper! Voila!
