Apricot compote

Day 20 of 30. Two thirds through my summer cooking challenge! 10 more recipes to go...

A summer Sunday Brunch just screams for compote & yoghurt.

 

I make compotes regularly, not in big batches, but enough for a few days so I don't get bored of eating the same thing.

 

The colour of apricot compote is so inviting and just cheers you up in the morning.

Simply you will need 10 minutes, done!

 

700g fresh apricots, stoned and halved

100ml water

1 tablespoon honey or sugar

 

Cut up the apricots and use a heavy bottomed pan, with water and honey or sugar.

Keep stirring this for 15 minutes, you won't need it to be like jam, it's nice to have big bits of fruit.

Chill & keep in the fridge. Serve for breakfast with yoghurt and oats.

Sunday brunch done...
