Chipatis

You can't have a curry night without chipatis. I first made these 25 years ago, travelling and on a budget. A flat bread you can make very quickly for curries, wraps or dips!
This recipe makes 8
You ONLY need:
450g white or wholemeal flour
1 teaspoon salt
250ml water

It's time to get messy!
Add the water slowly to the flour and mix in with your hands. It will come together, like this, keep kneading.

Knead for 5 minutes until the dough is smooth, the more you knead the softer the chipati.
Then cut into 8.

Flour your worktop and rolling pin and start rolling. You will need to do this until they are 1 mill thin!
Heat up a large frying pan.

You will dry fry these, so no oil.

Cook each side until browned.

They will puff up!
Stack them up once done, and cover with foil. This will keep them soft.

Perfect for curry night! Voila!
