Baked Vegetable Samosas

It's Friday and time to get busy with a homemade curry!
This is recipe 17 of 30, in my 30 recipes in 30 days challenge.
So, I've made these to go with a curry as a starter. We have 15 for dinner!
These aren't spicey, just more fragrant. This recipes makes 16 large samosas.
So you will need:
200g potatoes chopped into 1cm cubes
2 rolls of brick pastry
2 carrots chopped into 1cm cubes
100g frozen peas
2 tablespoons mild curry paste
400ml water
3 tablespoons nut oil

Pre-heat the oven to 200c.
Fry the curry paste with some nut oil.
Add the vegetables and get some colour on the veg.

Add the water and bring to the boil, gently, you don't want a mush.
Cook for 10 mins, then take off the heat to cool completely. Any remaining water will get absorbed in this time too.

Prepare the pastry. Cut into 25cm widths and place a tablespoon of vegetable mixture. Fold into triangles.

No need to seal these with egg. Baking them will seal them.
Place on a tray and bake for 10 minutes on each side, until brown. Then cool on a rack.

I've previously done these and deep fried them. This is a much healthier recipe!

Serve with mango chutney & yoghurt & cucumber. Voila!
