Ricotta stuffed mushrooms

Day 15 of 30!
From now, it gets to feel like more of a challenge...I'm going completely blank when people ask 'what are we eating tomorrow?'
But it's a good sign that I will take myself out of my comfort zone and try things I've never tried before!
Still on the theme of vegetarian (my sister is visiting and vegetarian) I found this quick recipe on Jamie Oliver late last night, and it has taken about 10 minutes!
Perfect for a starter, or as part of a selection of appetisers.
So quite simply, you will need:
12 mushrooms per person
2 tablespoons ricotta cheese
freshly grated parmesan
salt & pepper
zest of 1 lemon
1/2 teaspoon cayenne pepper
1/2 teaspoon dried origano
a dirizzle of olive oil in the oven dish for baking

Pre-heat your oven to 200c.
Remove the stalks and peel the mushrooms. I've just used regular closed up mushrooms but portobello mushrooms would make a more substantial meal.
Mix all the ingredients in a bowl.

Using a teaspoon, fill each mushroom and top with a little extra freshly grated parmesan. Drizzle oil over them for baking.

Bake for 25 minutes or until the top is golden brown.

I'll reheat & serve this later with a green salad for my sister. Voila!
