Fish Cakes

Day 14 of 3O.
30 recipes in 30 days is intense! Sometimes the recipes don't work so some days it's been 2 or 3 dishes cooked! I actually thought it would be an expensive challenge, but it hasn't and I have eaten well and healthy too, ie just eating small dishes, but delicious ones and satisfying ones. I can't say it's been good for my sleep as I'm still up at 1.30am...
I've made these fish cakes for a starter for tomorrow as I have friends arriving for 10 days of summer holidays in SW France.
So as it's summer, I am loving seafood and I thought I would try these as a starter or smaller ones would work great as an appetiser.
Again a simple, no recipe 'recipe'. So all you need is:

200g prawns
200g scallops
100g breadcrumbs
1 garlic clove
1 teaspoon crush ginger
1 egg
Juice of 1 lime
handful of parsley
1 taespoon harissa
1/2 teaspoon cayenne pepper
Salt & Pepper

Place everything in the blender

Blend to an almost smooth mixture, nice to still have some bits of prawns

Take a tablespoon of mixture at a time and in a very hot frying pan, fry for 5 minutes on each side. 1 tablespoon for a starter, 1 teaspoon for an appetiser.
The mixture is sticky, and needs to be left to brown before being turned over.

Serve warm, or leave to cool and re-heat in the oven the following day.
Serve with sweet chilli dipping sauce and a cucumber and seasame salad. Voila!
