Sunday Supper - Scallops & Chorizo
Day 13 of 30 in my cookery challenge.
It's sunday night and all I ever want is something simple and light.
This would make a perfect starter. It's delicious and takes 10 minutes to prepare from fresh.
An easy dish to rustle up. You'll only need
A handful of scallops
A squeeze of lemon
A handful of chopped flat leaf parsley.
Heat up your pan, no need for oil. Fry the slices of chorizo.
Add your scallops and fry for a minute on each side.
Turn over for another minute and add a squeeze of lemon juice.
Then it's Downton Abbey on Netlix for me! Voila!
