Mushroom Pastries

Day 12 of 30 and nearing the half way mark!

Next week I have visitors and some of whom are vegetarian, so am trying some nice vegetarian recipes.

I love mushrooms and pastry!

These are great and you can bake them then freeze them.

So you will need:

Oblong shop bought puff pastry

Handful of mushrooms


Salt & Pepper

Handful of flat leaf parsley

1 egg for glazing

You can also add, goats cheese, stilton would be great or cream cheese.

Firstly, chop up the mushrooms, in a pan add some olive oil, salt & pepper and chopped garlic.

Keep frying the mushrooms until they are golden brown.

Roughly chop the parsley and add to the pan. The mixture needs to be cool before putting on the pastry otherwise you'll get a soggy bottom.

Let the mushrooms cool

Cut your pastry into 3 widths. Add the mushrooms, and leave room at the sides to brush with egg wash. If you wanted to add cheese, add it on top, I had some goats cheese left over, so I added that too.

Wash the edges with egg. Fold over the edges and seal with a fork.

Wash the tops with the egg wash. Bake in the oven for 25 mins at 190c.

Halfway through turn your tray around so the pastries brown on all sides.

Serve with a dressed spinach salad and some tzatziki or hummus. Would also be perfect for a picnic. Voila
