Day 10 of 30...yippee double digits!
There is something utterly comforting with satay sauce! It's depth of flavours, nutty, salty with an asian tang!
It's perfect partner is chicken, and I always pick chicken thigh, breast can be so dull and dry sometimes! For this I marinated chicken thighs with ginger, the juice of 1 lime and some soy sauce.
So you will need:
2 tablespoons nut oil
1 garlic clove chopped
1/2 teaspoon grated ginger
1/4 teaspoon cayenne pepper
1 table spoon of sugar
2 tablespoon soy sauce
2 tablespoon peanut butter
200ml coconut milk (not cream)
Heat up the oil and add the garlic, ginger cayenne and sugar, and over a low heat cook these.
Then add the soy sauce, then the peanut butter
Finally, add the coconut milk and mix until bubbly. Then you can serve it along side your chicken or put in the fridge for tomorrow. You can loosen it up more with some coconut & amlond milk.
I'll take my chicken with satay dipping sauce and a beer in the sun!
Serve with summer salads and a selection of chicken skewers.
