Day 7 of my 30 recipes in 30 days challenge.
Today it's been really hot here in SW France, off to a BBQ and as an accompaniment this is a great salad. But for those of you who prefer vegetarian meals, a great main course salad.
So it's really a more elaborate taboulet.
You will need:
1 tin of chickpeas
1 jar of grilled peppers (3 peppers)
50ml olive oil
juice of 1 lemon
1 teaspoon salt
1 teaspoon ground pepper
1 teaspoon cumin seeds
3 teaspoons Zaatar
1 pack of feta
1 handful of fresh mint
1 handful of fresh parsley
Drain the chickpeas and peppers, chop up the peppers roughly.
In a bowl, cover the couscous in boiled water. Once the water has been absorbed, add water again to cover the couscous and let it rest.
Chop the tomatoes and cucumber and add. Add the couscous. Add the fresh herbs. Add the olive oil, lemon, cumin seeds, zaatar, salt & pepper and with your hands mix well.
Lastly, crumble the feta in. You could use goats cheese too.
Chill in the fridge for an hour, and mix well before serving. Voila!!
