Watermelon Granita

So I'm on day 4 of my 30 recipes in 30 days challenge.

It's full on summer and everytime I go to the supermarket, they are piled high with watermelon....yummy

 

Here's a recipe which can keep your love for watermelon long into the summer. It makes a perfect easy dessert for any friends popping by for a casual weekend dinner.

 

The watermelon really looks this good and this deep red is without filters, it looks and tastes amazing!!

 

Granita is a very simple recipe, it takes time in the freezer, but it takes 10 minutes to make! Don't be surprised by the sugar, anything sweet and frozen needs more sugar than usual, so if you taste it unfrozen, it will seem sweet, but no so when frozen.

 

If you don't like watermelon, you can use other melons, strawberry, raspberry or any other fruit. 

 

So you will need:

 

1/2 fresh watermelon, diced

100g sugar

Juice of one lemon

 

 

Add all the ingredients, melon, sugar & lemon juice.

In a food processor, liquidise until smooth.

 

Place in the freezer and after one hour, bring out and with a fork break up any frozen crystals, back in the freezer. Leave for an hour and repeat. Back in the freezer. Leave for an hour and repeat. By this time everything should be frozen, if not pop back in for another hour.

Serve frozen.

 For a more grown up desset, add a shot of vodka! Voila!
