Salt & Pepper Squid
After a successful dinner event recently, I updated this recipe from last year. I had lots of polenta left over, after testing polenta chips, so I've added polenta to the flour mix for extra crunch! CRUNCH!!
Recently, I bought lots of lovely seafood to freeze.
You really don't need to defrost seafood, it just needs cooking properly, so I've used the squid from frozen for this perfect summer starter.
So you will need the following:
A small saucepan of vegetable oil for cooking
1 egg beaten
1 tablespoon fresh ground pepper
1 tablespoon salt
Handful of squid per person
Some flour and polenta for dusting
Get the oil heating on the hob, it really needs to be volcanic hot!
Mix the salt & pepper in the flour & polenta.
Dip the frozen squid in the beaten egg and then back into the flour & polenta.
Don't over fill the squid in the oil, better to do in batches of 4 at a time.
Cook for 2 minutes on each side.
Drain on kitchen roll.
Then serve with an extra sprinkling of pepper, a squirt of lemon and some homemade mayonnaise on the side.
Serve hot! Voila!
