As summer gets closer, I feel the need for some light cool lunches, but I also feel the need for leaving the recipe books alone. Lunches are a great way to use up those left over bits in the fridge. I had some left over goats cheese, so I got to work.
Tarts or quiches are so simple, quick and tasty. It's also a great 'no recipe' recipe
So very simply....what is to hand?
A bunch of fresh asparagus
ready-made puff pastry
A mug of frozen peas
A pack of goats cheese
Salt & pepper
Set the oven to 180c
Find your metal quiche tin, I always leave the paper on the pastry, makes the tart easier to remove from the tin too! So press the pastry into the tin. Don't forget the pastry shouldn't sit around too long, pastry should be cool going into the oven.
Remove the wooden ends of the asparagus, and chop up the cheese.
So whisk your eggs & cream with salt & pepper. Add the asparagus, peas & goats cheese. Pour the mixture onto the pastry and place on the middle shelf of the oven.
Bake for 40 minutes until brown.
It is best to leave a quiche to cool. Serve simply with a green salad
