Mummys Feel Better Soup
So this is a recipe for soup that I make everytime my children are feeling poorly and they always perk up very quickly after!! As I woke with my annual tonsilitis, here comes the soup and I'm already feeling better!!
This soup is full of garlic, a great natural antibotic, cloves, a great booster for your immune system and parsley, great for cleaning your blood!
I've made a vegetarian version today as I'm sharing it, but you could use chicken stock and chicken, as I do regularly.
So you will need:
8 (yes but bare with me) cloves of garlic, whole
1 big bunch of fresh flat leaf parsley
4 carrots, diced
3 potatoes, diced
6 stalks of celery
3 handful of puy lentils
salt & pepper
In a large saucepan add all the garlic, cloves, vegetables and sweat these with a large glug of olive oil. Now it looks like a lot of garlic, but by adding it whole, you wont taste the garlic and as the garlic softens in the cooking, you can crush them when soft! Trust me, you won't smell of garlic but you will get the benefits!
Add boiled water until you cover all the vegetables. Add the stock & lentils.
Cook for 30 mins. Taste and season with salt & pepper. Add the parsley.
Serve with hot baguette and a duvet!!
