Brown rice & kale isn't that boring!

So after all the table setting, washing dishes, loading & unloading cupboards dishwashers etc sometimes you just want a one bowl dinner on your lap.

 

This recipe is the secret love child of Nigella & Gwyneth

 

So you will need

 

a knuckle of fresh ginger

2 cloves of garlic

1 onion

1 huge bag of kale

2 packets of pre-cooked brown basmati rice

left over turkey

light soy sauce

pepper

 

you could add

 

brussel sprouts

spring onions

left over turkey

left over pork

mushrooms

beansprouts

 

So peel the ginger and slice into fine matchsticks, dice the onion and slice the garlic wafer thin.

 

In a wok or large saucepan, heat vegetable oil and put the heat on medium.

Add the ginger, garlic and onion and gently cook, do not over brown.

Add the turkey and cook until all soft and brown.

Now add the kale and a splash of soy to create steam. The kale will wilt quickly so add more kale.

Lastly, add the cooked rice. Add more soy sauce and pepper and cook everything until the soy covers everything.

 

At this point you can add any or all of the extras on the list, but we just grabbed a bowl and sat to a very tasty but very healthy bowl for dinner!
