There's a mousse loose about this hoose

Sometimes you get a recipe and you can use and re-use the recipe by changing the flavours. So keep the base and then add whatever is seasonal.

A few months back we featured our lemon mousse recipe, using the lemon curd we had made previously, check it out

As autumn is the season of red berries, we thought we'd love a refreshing dessert for an autumnal dinner party.

This is a super quick recipe and you can even use frozen berries!

This recipe doesn't use gelatine but it does use raw egg whites, so check peoples allergies and always use the freshest eggs!

So you will need the following:

1 egg white

200ml whipping cream

1 tablespoon vanilla sugar

500g mixed red berries

Meringues for the topping (homemade or shop bought)

Icing sugar for dusting

Serves 8

Prep time 10 mins! (oh yes 10!)

Whip egg whites until stiff. In an other bowl, whip the cream and sugar to create a chantilly cream. Fold in half the berries into the cream. Fold in the egg whites.

In the bottom of individual glass bowls or glasses, add 2 tablespoons of red berries (can be frozen) followed by 3 tablespoons of the mousse.

At this point you can refrigerate for a few hours and then just before serving, add crushed meringues and dust with icing sugar.

Serve with a biscotti and a glass of bubbles! Voila!
