Sunday Night Bakes
Sometimes you just need a really quick biscuit recipe which can not fail!
I do favour recipes which don't involve creaming butter, which is bore for those spur of the moment cravings as the butter is too hard straight out of the fridge. This recipe melts the butter so the whole prep time takes about 5 mins and the bake time is no more than 10 minutes! By the way, if you need a great muffin recipe which uses melted butter, try Gywneth Paltrows blueberry muffin recipe, it is amazing!
So by the time you've loaded the dishwasher, you can sit with some sunday night treats!!

So you will need these ingredients, which you will find in most cupboards.
120g - Butter
2 tablespoons of honey or golden syrup
1 teaspoon of bicarbonate of soda
120g - granulated sugar
120g - plain flour
180g - porridge oats
If you have any raisins, dried figs or cranberries, add those!
So put the oven on to 190c and prep a baking sheet with tin foil.
Melt the butter & honey or syrup over a low heat and while that's on the go. Measure out the dry ingredients in a bowl.
When the butter has melted, take off the heat, add a teaspoon of bicarbonate of soda and it will fizz up quickly.
Mix into dry ingredients and stir in.
You can spoon individual biscuits but as it's sunday and we are looking for a quick fix, I just cover a sheet and press down with the back of a spoon, then pop in the oven for 10 mins. So tidy up, put everything away, get that kettle on and bing! Voila!
Take out of the oven and with the back a knife, mark the tray biscuit into squares and leave for 5 til cool...Just in time for Strictly!
