A French breakfast classic - Pain Perdu
The great thing about brunch is that you can make whatever tickles your fancy!
Last week we did an american classic - pancakes! and they were delicious...
This weekend, we are sticking to a classic french recipe. Eggy bread, French toast or as the french call it, pain perdu. Literally translated, lost bread. It's what you do with 2 day old french bread, or in this case, old brioche.

So there was a hungry queue waiting to be fed, so these quantities make 8, which would serve 4 people!
3 large eggs
6 tablespoons of milk
8 slices of brioche
3 drops of vanilla essence
1 tablespoon caster sugar
Butter

Beat eggs, milk, sugar & vanilla. Use a pancake pan and drop a teaspoon of butter and melt. Drop a couple of slices of brioche at a time and turn in the egg mixture.

When the pan is hot, fry a couple of slices at a time, until golden brown, then turn.

Serve with compote or sprinkled with sugar but eat warm!
