What to do with...courgettes and cucumbers

This week it's all about the great seasonal vegetables growing like crazy at the moment, courgettes & cucumbers.

Tip no1:

 

Freezing vegetables with high water content such as courgettes can leave you with a discoloured mush! The key to keeping your vegetables fresh for the freezer, is to blanche them first. This will kill the enzymes in vegetables which make them go mushy!

You will need a large saucepan & large bowl of cold water and ice.

Get the water boiling and then pop your courgettes (in batches) for a minute, then from the boiling water and straight into ice water!

Then your vegetables are freezer ready!

 

If you are going to freeze vegetable for a specific use after, cut them accordingly, ie, for soup cut them cubed, for roasting cut them into chips etc 

 

You are ready to go!
